Along with the classic kales and chards, we present another cold season favorite green— the collard!
Fun fact: the word “collard” is derived from Middle English word “colwort”, meaning “cabbage plant”. As the first leafy green developed from the brassica family, collards have been around since Roman times— over 2000 years! Grown for their large lovely leaves rather than tight little cabbage heads, collards have become a staple during the colder, darker months in the Northern hemisphere.
Not that these greens are limited cold climates— collards are also a key ingredient in traditional Brazilian feijoada. Made with various beans, sweet potatoes, peppers and spices— feijoada is a hearty stew, often served over collards. Here’s a recipe for Vegan Feijoada.
