A member of the Allium family, the leek is a simple yet super classy vegetable: graceful and elegant, with a subtle fragrance and flavor of garlic. Did you know that the leek is the national symbol of Wales? According to legend, a 7th century king, Cadwaladyr, had his soldiers strap leeks to their armor— to help distinguish them from enemy soldiers in the heat of battle. It later became a tradition in Wales to wear a leek in one’s cap on on March 1st (St.David’s Day) to remember the bravery of these archers.
