While many farmers might resist change, some of our market vendors have decided to embrace it! Long-time vendor Farmageddon recently received a food access technology grant for the development of a 3-D produce printer, for the purpose of diversifying crops and vegetables sold at market. The project has been in the works for 6 months, and is nearly ready for public demonstration! According to farmer Neil, they have been working on a prototype of a dragon fruit. “Well, it kinda looks like a dragon fruit,” says Neil scratching his head, “but we’re still working on getting rid of the plastic aftertaste— which is weird because it’s not really made of plastic.” He acknowledges that earlier attempts looked less like a dragon fruit and more like a Boston Terrier— and he knew that would be off-putting to customers. Already, other market vendors have shown enthusiasm. Joyce, of Sourdough Sister, noted that this technology would reduce prepping and baking time by up to 85%. “That means more bread for our customers! And it means a little more rest for me,” she says, stifling a yawn. “I was up until 4am baking last night.” According to Neil, we’ll start seeing 3-D printed fruits as early as this winter. “It will be a great boost to sales in winter months when it’s hard to grow anything,” he says. “And nice for our customers during the holiday season.
