It’s peak hot summer vegetable season, and we’re also eggcited about all the produce options, including eggplants!

Eggplants— known by the French as Aubergines— grow in many varieties with wonderful, evocative names. If you farm or garden in Oregon, you may be familiar with the classic Black Beauty, the dreamy purple Fairy Tale, the white Snowy Eggplant or the ghostly Casper variety, the striped Italian heirloom Rosa Blanca, as well as Japanese variety Ichiban and Thai variety Little Finger— also known as Thai Green Frog Fingers.

All of these eggplants have different purposes. If you’re going to make a classic eggplant parmesan, it’s best to use a round, or globe variety (American or Italian eggplant). For a stir fry, like this Stir Fried Miso Eggplant, the best eggplants are Asian varieties, due to thinner skin, mild and sweet flavor, and minimal seeds.

And if you’re making a dip like Easy Roasted Eggplant Dip or Baba Ganoush, it seems that most eggplants work very well! Just make sure to select a fresh eggplant with firm skin and a green stem, with minimal blemishes. Whenever possible, roast or grill over an open flame for characteristic smoky flavor.

• Visit Oak Flat Vineyards and try their Columbia Gorge wines: rhone style red and white wines grown from grapes grown in the Dalles.

• Bring your favorite doggos to visit Fatty Boy, food for your canine friends made from fresh, locally sourced meats, grains and vegetables grown in Oregon, Washington, and Idaho.

• It’s still blueberry season! Springbank Farm is here with Gee Creek, offering Oregon Tilth-certified organic blueberries all season long!
