Gluten-Free Quinoa Pizza Crust

Quinoa Pizza Crust (Gluten-Free)
Makes one personal pizza

Ingredients:

  • 1/2 cup quinoa, rinsed, soaked 8 hours or overnight, drained, rinsed again
  • 1/2 tsp baking powder
  • 1/4 tsp sea salt
  • 3 tbsp water
  • cooking spray

Topping ideas:

  • Arugula pesto
  • Fried eggplant
  • Fresh tomatoes
  • Goat cheese

Instructions:

1.  Preheat oven to 425F and line a baking sheet with parchment paper. Lightly coat the parchment paper with oil spray or brush it on yourself

2.  Add the soaked and rinsed quinoa, baking powder, salt, and water to a blender and blend until smooth. Pour the batter onto the lined baking sheet and spread out evenly using a rubber spatula.

3.  Bake in the oven for 15 minutes. Removed and flip the crust over and bake for another 3 minutes, or until the edges begin to brown.

4.  Add toppings and bake until heated through and cheese is melted, about 6 minutes.
